  KOLEK PISANG (Finger Bananas in Coconut Milk)



There are more than a dozen types of edible banana in Bali, this dessert uses the tiny sweet variety about 10-12 cm (4-5 in) in length.

INGREDIENTS:

3 cups coconut milk
½ cup palm sugar syrup
1 pandan leaf
16 finger bananas, peeled
1 tbsp corn flour
1 tbsp water

PREPARATIONS:

Bring coconut milk, palm sugar syrup and pandan leaf to the boil over medium heat. Reduce heat and simmer for 15 minutes. Add finger bananas and continue to simmer for 10 minutes.

Dissolve corn flour in water and add to bananas. Continue simmering for a couple of minutes, stirring until the sauce thickens. Remove from heat, discard pandan leaf and allow to cool. Serve well chilled.
